Snacks – Shelf Life Testing

Application to Snacks   snacks-billede-Sidebar   When creating a new recipe, industrials are highly preoccupied by the shelf life of their food products indeed, the product should not develop unwanted flavors upon ageing, so that the customer will not have a bad surprise when consuming the product.   During shelf life studies, the overall flavor must be reliable assessed and testing methods should allow to explain the possible causes of sensory defects. In this study, it is proposed to use HERACLES fast gas chromatography Electronic Nose to follow-up the organolepic profile of snacks over time and to assess the chemical changes that may affect the sensory quality.
